Criticality refers to the balance of neutrons in a reactor. In a subcritical state the number of neutrons is decreasing, and the reactor will produce less power as time goes on. In a critical state there is no change in the number of neutrons or power produced over time. In a supercritical state the number of neutrons is increasing, and the reactor will produce more power as time goes on.
